To Pot Mushrooms

- Salt
- Butter
Steps
Take of the best mushrooms, and rub them with a woollen cloth; those that will not rub, peel, and take out the gills, and throw them into water, as you do them; when they are all done, wipe them dry and put them in a saucepan, with a handful of salt and a piece of butter; stew them till they are enough, shaking them often for fear of burning; then drain them from their liquor, and when they are cold wipe them dry, and lay them in a pot one by one as close as you can, till your pot be full; then clarify butter; let it stand till it is almost cold, and pour it into your mushrooms; when cold, cover them close in your pot.
